Wash and scrub the russet potatoes thoroughly. Cut them into thin strips to create fries.
In a large bowl, toss the potato strips with olive oil, salt, and black pepper until evenly coated.
Spread the fries in a single layer on a baking sheet lined with parchment paper.
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
Remove the fries from the oven and sprinkle the shredded cheddar cheese evenly over the top.
Return the fries to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Once out of the oven, top the loaded fries with crumbled bacon, sliced green onions, sour cream, and jalapeños if using.
Serve immediately while hot and enjoy!
