In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Once the cookie bases are completely cool, spread a layer of the cream cheese mixture on each mini pizza.
Arrange the assorted fresh fruit on top of the cream cheese layer. Drizzle with lemon juice to prevent browning.
Serve immediately or refrigerate until ready to serve.
