Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar

  • 1/4 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups assorted fresh fruit such as strawberries, blueberries, kiwi, and bananas
  • 1 tablespoon lemon juice

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.
  3. Add the softened butter, egg, and vanilla extract to the dry ingredients. Mix until a dough forms.
  4. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each portion slightly with your fingers.
  5. Bake for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely.
  6. In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  7. Once the cookie bases are completely cool, spread a layer of the cream cheese mixture on each mini pizza.
  8. Arrange the assorted fresh fruit on top of the cream cheese layer. Drizzle with lemon juice to prevent browning.
  9. Serve immediately or refrigerate until ready to serve.
