Cooking Steps
  1. Preheat your oven to 180°C (350°F).
  2. In an oven-safe pan, heat olive oil over medium heat. Add chorizo and sauté for about 10 minutes until crispy. Remove and set aside.
  3. In the same pan, add diced red onion and minced garlic. Sauté for 3-5 minutes until tender and golden.
  4. Stir in tomato and roasted red pepper sauce, followed by chicken broth. Simmer for 5 minutes until thickened.
  5. Add spinach and simmer for another 2-3 minutes until wilted.
  6. Add gnocchi and cook together for about 3 minutes until tender.
  7. Return the chorizo to the pan, adding lemon zest and fresh basil. Stir well to combine.
  8. Tear fresh mozzarella into chunks and sprinkle over the mixture. Bake in the oven for 15-20 minutes until cheese is golden and bubbly.
