  • 2 small baguettes sliced in half lengthwise
  • 1/2 cup pesto sauce
  • 8 ounces sharp cheddar cheese sliced
  • 2 medium tomatoes sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Place the sliced baguettes on a baking sheet, cut side up.
  3. Spread an even layer of pesto sauce on each half of the baguettes.
  4. Layer the sliced cheddar cheese evenly over the pesto.
  5. Arrange the tomato slices on top of the cheese. Drizzle with olive oil and season with salt and pepper.
  6. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a minute. Garnish with fresh basil leaves if desired.
