Ingredients
  

  • 1.5 pounds lamb chops about 8 chops
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 teaspoons fresh rosemary chopped (or 1 teaspoon dried)
  • 2 teaspoons fresh thyme chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika

Method
 

  1. Preheat the oven to 400°F.
  2. In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, salt, black pepper, Dijon mustard, lemon juice, and paprika to create a marinade.
  3. Place the lamb chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the chops, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  4. Remove the lamb chops from the marinade and place them on a baking sheet lined with parchment paper. Reserve the leftover marinade.
  5. Bake the lamb chops in the preheated oven for 20-25 minutes for medium-rare, or until they reach your desired doneness. Brush the chops with the reserved marinade halfway through cooking.
  6. Once done, remove the lamb chops from the oven and let them rest for 5 minutes before serving.
