  • 1 pound white fish fillets such as cod or tilapia, cut into bite-sized pieces
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Cooking spray or oil for baking

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper and lightly spray with cooking spray or brush with oil.
  2. In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
  3. In another bowl, whisk together the eggs, Dijon mustard, and lemon juice until well combined.
  4. Dip each piece of fish into the egg mixture, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere. Place the coated fish nuggets on the prepared baking sheet.
  5. Spray the tops of the fish nuggets lightly with cooking spray for extra crispiness.
  6. Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and the coating is golden brown.
  7. Serve immediately with your favorite dipping sauce, such as tartar sauce or a squeeze of fresh lemon.
