Method
 

Dough Preparation
  1. In a large mixing bowl, combine 4 cups of all-purpose flour, ½ cup of granulated sugar, and 2 ¼ teaspoons of active dry yeast. Slowly stir in 1 cup of warm milk (about 110°F) and mix in ½ cup of melted butter until well incorporated.
  2. Knead the mixture on a lightly floured surface for about 5-7 minutes until smooth and elastic, then place it in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot until doubled in size, around 1 hour.
Filling Preparation
  1. While the dough is rising, prepare the filling by slicing 2-3 peaches and placing them in a medium bowl. Add 2 teaspoons of ground cinnamon and ½ tablespoon of granulated sugar, tossing to coat the peach slices. If your peaches are very juicy, mix in 1 tablespoon of flour to help thicken the filling. Set this peach mixture aside to allow the flavors to meld while the dough rises.
Rolling and Filling
  1. Once the dough has risen, punch it down gently and turn it out onto a floured surface. Roll it out into a rectangle about 16x12 inches. Evenly spread the peach mixture over the rolled-out dough, making sure to distribute it well.
  2. Starting from one long edge, roll the dough tightly into a log. Using a sharp knife, slice the log into 12 equal pieces and place the rolls in a greased baking dish, cut side up.
Second Rise
  1. Cover the rolls lightly with a kitchen towel and let them rise in a warm area until they are puffy, which should take about 30 minutes. As they rise, preheat your oven to 350°F (175°C).
Baking
  1. Once the rolls have puffed up, place them in the preheated oven and bake for about 25 minutes. Keep an eye on them as they bake; you're looking for a lovely golden-brown color and a lightly firm texture on the outside.
  2. When they’re done, remove the rolls and let them cool slightly in the pan while you prepare the frosting.
Frosting Preparation
  1. In a mixing bowl, beat together 4 ounces of softened cream cheese and 1 cup of powdered sugar until smooth and creamy. If desired, add a splash of vanilla extract to enhance the flavor. Drizzle this luscious frosting over the warm rolls, allowing it to melt slightly into the crevices.
