Ingredients
  

  • 2 large flour tortillas
  • 1/2 cup creamy peanut butter
  • 1 medium ripe banana sliced
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon honey optional
  • 1 tablespoon butter or cooking spray for frying

Method
 

  1. Heat a non-stick skillet over medium heat.
  2. Spread 1/4 cup of peanut butter evenly on one side of each tortilla.
  3. Layer the banana slices on top of the peanut butter on one tortilla.
  4. Sprinkle the cinnamon over the bananas. Drizzle honey on top if desired.
  5. Place the second tortilla on top, peanut butter side down, to form a sandwich.
  6. Melt the butter in the skillet or spray with cooking spray.
  7. Carefully place the quesadilla in the skillet and cook for 2-3 minutes until golden brown.
  8. Flip the quesadilla and cook for another 2-3 minutes on the other side.
  9. Remove from the skillet and let cool for a minute before slicing into wedges.
