  1. Prep the Beef: Thinly slice the steak against the grain. Season with salt, black pepper, and optionally soy sauce and cornstarch.
  2. Mix the Sauce: Whisk together soy sauce, oyster sauce, sugar, and sesame oil. Incorporate the cornstarch slurry.
  3. Sear the Beef: Heat oil in a skillet, add beef, cook for 2-3 minutes until browned, then remove from skillet.
  4. Sauté Aromatics: Add onion and garlic to the skillet, sauté for 1-2 minutes until fragrant.
  5. Combine Noodles & Sauce: Add udon noodles and sauce to skillet, toss to coat, cook for 2-3 minutes.
