  • 2 medium beets peeled and grated

  • 2 medium carrots peeled and grated
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped walnuts optional
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the grated beets, grated apple, grated carrots, chopped parsley, and walnuts if using.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey or maple syrup, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
  4. Let the salad sit for about 10-15 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
