Preparation
- Coarsely chop 2 ripe red tomatoes, 3 cups of watermelon, and 1 cup of strawberries. Add in 1 red jalapeno and 1-2 garlic cloves. Place all ingredients into a large mixing bowl.
 
Blend
- Transfer the prepared ingredients into a blender. Blend on high for about 1-2 minutes until smooth and creamy.
 
Incorporate Oil
- With the blender running, slowly drizzle in 1/4 cup of extra virgin olive oil and blend for another 2-3 minutes.
 
Taste & Adjust
- Pour the gazpacho into a large bowl. Taste and adjust seasoning with salt and lime juice.
 
Chill
- Cover the bowl or transfer the gazpacho into airtight containers. Refrigerate for at least 2 hours.
 
Serve
- Pour into bowls or cups, garnishing with fresh corn, diced cucumbers, or a sprinkling of pink peppercorns.
