For the Creaminess

  • 2 slices white bread Gluten-free bread for gluten-sensitive diets works too.
  • 1/4 cup extra virgin olive oil Essential for achieving silkiness; don't skip this step.
For the Flavor Boost
  • 2 tablespoons lime juice Lemon juice can be used for a different citrus flavor.
  • 1 tablespoon red wine vinegar Apple cider vinegar can be a good alternative.
  • 1 teaspoon kosher salt Regular table salt can also be suitable.
  • 1 teaspoon pink peppercorns Regular black pepper can also be used.

Method
 

Preparation
  1. Coarsely chop 2 ripe red tomatoes, 3 cups of watermelon, and 1 cup of strawberries. Add in 1 red jalapeno and 1-2 garlic cloves. Place all ingredients into a large mixing bowl.
Blend
  1. Transfer the prepared ingredients into a blender. Blend on high for about 1-2 minutes until smooth and creamy.
Incorporate Oil
  1. With the blender running, slowly drizzle in 1/4 cup of extra virgin olive oil and blend for another 2-3 minutes.
Taste & Adjust
  1. Pour the gazpacho into a large bowl. Taste and adjust seasoning with salt and lime juice.
Chill
  1. Cover the bowl or transfer the gazpacho into airtight containers. Refrigerate for at least 2 hours.
Serve
  1. Pour into bowls or cups, garnishing with fresh corn, diced cucumbers, or a sprinkling of pink peppercorns.
