Preheat your oven to 400°F (200°C).
In a large bowl, toss the pumpkin cubes with olive oil, salt, black pepper, cumin, and smoked paprika until evenly coated.
Spread the seasoned pumpkin in a single layer on a baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the pumpkin is tender and lightly caramelized, stirring halfway through.
While the pumpkin is roasting, prepare the yogurt sauce. In a small bowl, mix together the Greek yogurt, lemon juice, and honey until smooth.
Once the pumpkin is done, remove it from the oven and let it cool for a few minutes.
To serve, place the roasted pumpkin on a serving platter, drizzle with the yogurt sauce, and sprinkle with toasted pine nuts and chopped parsley.
