Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and 1 cup of powdered sugar until light and fluffy.
Mix in the vanilla extract and salt until well combined.
Gradually add the flour and chopped nuts to the butter mixture, stirring until a soft dough forms.
Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 15-20 minutes, or until the bottoms are lightly golden. The tops should remain pale.
Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes. While still warm, roll each cookie in powdered sugar to coat.
Allow the cookies to cool completely on a wire rack, then roll them in powdered sugar again before serving.
