  • 1 cup milk almond or oat milk for dairy-free
  • 2 tablespoons butter or olive oil for a lighter option
  • 1 cup grated cheese like cheddar or mozzarella
For the Sausage Mixture
  • 1 pound sausages spicy or mild Italian, or chicken/turkey for lighter
  • 1 medium onion or shallots as a milder option
  • 2 cloves garlic minced
  • 1 medium bell pepper or zucchini, mushrooms as alternatives
For Seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, combine water and milk; bring to a boil. Slowly whisk in the polenta, reduce heat, and cook for about 5-7 minutes, stirring until thickened.
  3. While the polenta cooks, heat a large skillet over medium heat and sauté diced onion, minced garlic, and bell pepper in olive oil for 5-6 minutes until soft.
  4. Add sliced sausages to the skillet and cook for an additional 5-7 minutes until browned.
  5. Grease your baking dish and layer the cooked polenta mixture, followed by the sausage and vegetable mixture. Top with remaining grated cheese.
  6. Bake in the oven for approximately 20 minutes until the cheese is bubbly and golden.
  7. Let the dish cool for a few minutes before serving warm.
