- Begin by preheating a large, oven-safe skillet over medium-high heat and adding a drizzle of olive oil. Season the chicken thighs with salt and pepper, then place in the skillet skin-side down. Sear for about 5–7 minutes until golden brown and crispy.
- Once browned, remove the chicken and set aside. In the same skillet, add sliced red onion and Honeycrisp apples, sautéing for about 3–5 minutes until onions are translucent and apples soften slightly.
- Deglaze the skillet by pouring in the apple cider and chicken broth, scraping up flavorful bits. Stir in Dijon mustard and minced garlic, simmer for about 5 minutes until thickened.
- Return the chicken to the skillet skin-side up in the sauce. Preheat your oven to 375°F (190°C) and transfer the skillet into the oven. Roast for approximately 20–25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
