Step-by-Step Instructions
  1. Cut sweet potatoes into 1-inch cubes, microwave with water covered for about 4 minutes.
  2. Dice chicken, season with salt, pepper, cumin, chili powder, and oregano.
  3. Heat olive oil in a skillet over medium-high heat, add chicken, sauté for 3-4 minutes until browned.
  4. Add onion and garlic, cook for 2 minutes until soft.
  5. Stir in sweet potatoes, black beans, tomatoes, chiles, lime juice, and salsa. Cook for 3 minutes until heated.
  6. Sprinkle cheese on top, cover and reduce heat, let melt for 2-3 minutes.
  7. Garnish with cilantro and serve directly from the skillet.
