- Finely chop the onion, green bell pepper, red bell pepper, celery, and green onions. Mince the garlic and set aside.
- Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat. Sear the chicken thighs for 3-5 minutes on each side until golden-brown, then set aside.
- In the same skillet, reduce heat to medium. Add 1/2 cup of unsalted butter, then whisk in 1/2 cup of all-purpose flour, stirring continuously for 10-15 minutes until the roux turns medium brown.
- Add the chopped onion, bell peppers, and celery to the roux. Sauté for about 10 minutes until softened, then add minced garlic and cook for an additional 1 minute.
- Gradually whisk in 3 cups of warmed chicken broth until smooth. Stir in 1 tablespoon of browning sauce and return the chicken, reducing heat to low and simmering for 30 minutes.
- Remove cooked chicken, chop into bite-sized pieces, and return to pot. Stir in chopped parsley and adjust seasonings with salt and pepper to taste.
