Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry to about ⅛-inch thickness.
  2. Using a 2¾-inch round cutter, cut out circles and place them on a parchment-lined baking sheet.
  3. Dock the center of each pastry circle to create an indentation.
  4. Whisk together an egg and brush the egg wash over the exposed pastry edges.
  5. Refrigerate the pastry circles for 10-15 minutes.
  6. Place a teaspoon of caramelized onions in the center of each circle and spread them evenly.
  7. Pre-bake the pastry for approximately 12 minutes until slightly puffed and lightly golden.
  8. Pipe a spoonful of fig jam into the center of each tart and top with goat cheese.
  9. Return the tarts to the oven and bake for an additional 5-8 minutes until the cheese is melted.
  10. Garnish with fresh thyme before serving warm or at room temperature.
