Preparation Steps
- Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry to about ⅛-inch thickness.
- Using a 2¾-inch round cutter, cut out circles and place them on a parchment-lined baking sheet.
- Dock the center of each pastry circle to create an indentation.
- Whisk together an egg and brush the egg wash over the exposed pastry edges.
- Refrigerate the pastry circles for 10-15 minutes.
- Place a teaspoon of caramelized onions in the center of each circle and spread them evenly.
- Pre-bake the pastry for approximately 12 minutes until slightly puffed and lightly golden.
- Pipe a spoonful of fig jam into the center of each tart and top with goat cheese.
- Return the tarts to the oven and bake for an additional 5-8 minutes until the cheese is melted.
- Garnish with fresh thyme before serving warm or at room temperature.
