  • 1 pound Mushrooms, sliced Opt for cremini or baby bella.
  • 5 cloves Garlic, thinly sliced Fresh minced garlic can be used.
  • 8 slices Swiss Cheese, finely chopped Mozzarella or provolone can be substituted.
  • 1 cup Goat Cheese, crumbled Blue cheese, feta, or cream cheese can substitute.
  • 1/3 cup Scallions, thinly sliced Chopped onions can replace scallions.
  • 1 teaspoon Table Salt
For Serving
  • 1 serving Mediterranean Salad Balancing side dish.
  • 1 serving Cauliflower Mash Creamy low-carb complement.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and prepare an 8x8 inch baking dish.
  2. In a high-sided pan, cook ground beef with 1 teaspoon of salt until browned, about 6-8 minutes.
  3. Stir in sliced mushrooms and garlic, cooking for another 6-8 minutes until mushrooms reduce and release liquid.
  4. Transfer the mixture to the baking dish, mix in 2/3 of Swiss cheese and all goat cheese, then top with scallions and remaining Swiss cheese.
  5. Bake uncovered for about 15 minutes until cheese is melted and bubbly.
  6. Let cool for 5 minutes before slicing into 4 portions.
