Step‑by‑Step Instructions
  1. Wash and dry the chicken thighs thoroughly. In a bowl, combine chicken with garlic, onions, lemon juice, mustard, paprika, cayenne, and salt. Mix and marinate for at least 2 hours.
  2. Heat olive oil in a skillet over medium-high heat. Remove chicken from marinade and sear for 4-5 minutes on each side until golden brown.
  3. Transfer chicken to a plate. In the same skillet, add onions and remaining marinade, reduce heat and caramelize the onions for about 5 minutes.
  4. Return chicken to the skillet. Add chicken broth, cover, and simmer for 15-20 minutes.
  5. After the chicken is cooked to 165°F, taste sauce and adjust seasoning. Serve warm with sauce drizzled over rice or cauliflower rice.
