Preparation
- Prep your fresh-cut okra—slice it into bite-sized pieces, chop the Roma tomatoes, onions, and prepare the shrimp.
- Ensure the shrimp are peeled and deveined.
Cooking
- In a large saucepan, heat 2 tablespoons of olive oil over medium-high heat.
- Add the shrimp in a single layer and cook until pink, about 6 minutes. Remove shrimp and set aside.
- In the same saucepan, add onions and okra. Stir and cover to cook for 20 minutes.
- Introduce tomatoes, tomato paste, garlic paste, and Cajun seasoning to the mixture. Add spices and water/broth.
- Reduce heat to medium-low, cover, and simmer for 45 minutes, stirring occasionally.
- Return shrimp to the saucepan, fold gently into the mixture, and simmer for an additional 10-15 minutes.
- Serve over rice or cornbread.
