  • 1 pound Colossal Raw Shrimp peeled and deveined
For the Sauce
  • 2 cups Roma Tomatoes or vine tomatoes
  • 2 tablespoons Tomato Paste intensifies the tomato flavor
  • 1 tablespoon Garlic Paste or fresh minced garlic
  • 1 cup Chopped Onions yellow onions are recommended
  • 2 tablespoons Cajun Seasoning adjust according to spice preference
For Seasoning and Cooking
  • 2 tablespoons Extra Virgin Olive Oil or another cooking oil
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 1 cup Water or Broth low-sodium broth enhances flavor
For Extra Flavor
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Cumin
  • 1/2 teaspoon Red Pepper Flakes
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 leaf Bay Leaf

Method
 

Preparation
  1. Prep your fresh-cut okra—slice it into bite-sized pieces, chop the Roma tomatoes, onions, and prepare the shrimp.
  2. Ensure the shrimp are peeled and deveined.
Cooking
  1. In a large saucepan, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add the shrimp in a single layer and cook until pink, about 6 minutes. Remove shrimp and set aside.
  3. In the same saucepan, add onions and okra. Stir and cover to cook for 20 minutes.
  4. Introduce tomatoes, tomato paste, garlic paste, and Cajun seasoning to the mixture. Add spices and water/broth.
  5. Reduce heat to medium-low, cover, and simmer for 45 minutes, stirring occasionally.
  6. Return shrimp to the saucepan, fold gently into the mixture, and simmer for an additional 10-15 minutes.
  7. Serve over rice or cornbread.
