Ingredients
  

  • 2 cups fresh strawberries hulled and sliced
  • 1 cup fresh mango diced
  • 1 tablespoon honey optional
  • 1 bottle 750 ml chilled sparkling wine or champagne
  • 1 cup orange juice
  • Fresh mint leaves for garnish optional

Method
 

  1. In a blender, combine the sliced strawberries, diced mango, and honey (if using). Blend until smooth.
  2. Strain the fruit puree through a fine mesh sieve into a large pitcher to remove any pulp.
  3. Add the orange juice to the fruit puree in the pitcher and stir gently to combine.
  4. To serve, fill each champagne flute halfway with the fruit mixture.
  5. Top off each flute with the chilled sparkling wine or champagne.
  6. Garnish with fresh mint leaves if desired.
