- Preheat your oven to 425°F (220°C). Prepare a baking sheet lined with parchment paper.
- Peel and dice the sweet potatoes into even 1-inch cubes. Transfer to a large mixing bowl.
- Drizzle diced sweet potatoes with honey and olive oil, then sprinkle with chopped rosemary. Toss until well coated.
- Spread the sweet potatoes onto the baking sheet in a single layer.
