Salad
  • 2 cups shredded chicken rotisserie chicken to save time
  • 2 cups chopped green cabbage or coleslaw mix
  • 1 cup shredded red cabbage or all green cabbage
  • 1 unit red bell pepper or any color bell pepper
  • 1 cup grated carrots or additional veggies like cucumber
  • 1 cup drained mandarin oranges omit for fewer ingredients
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro or parsley as substitute
  • 1/4 cup honey roasted peanuts use any preferred nuts
  • 1/4 cup slivered almonds or any preferred seeds

Method
 

Dressing Preparation
  1. In a medium bowl, combine peanut butter, soy sauce, chicken broth, and lime juice. Add honey, sriracha, garlic powder, toasted sesame oil, and ground ginger. Whisk for 2–3 minutes until creamy and smooth.
Chill Dressing
  1. Cover the bowl or transfer to a jar. Refrigerate for at least 30 minutes to meld flavors.
Prepare Salad
  1. In a large mixing bowl, add shredded chicken, green cabbage, red cabbage, red bell pepper, grated carrots, mandarin oranges, green onions, cilantro, honey roasted peanuts, and slivered almonds.
Serve Salad
  1. Drizzle the dressing over the salad. Toss gently for 1–2 minutes until well-coated. Serve immediately.
