- Preheat your oven to 180°C (fan) and line two baking trays with grease-proof paper.
- Unroll the puff pastry sheets on a lightly floured surface and cut out ghost shapes.
- Use a small piping nozzle to cut out eyes and mouths on half of the cutouts.
- Combine blueberries, sugar, cornstarch, and lemon juice in a saucepan and cook over medium heat until thick.
- Spoon blueberry filling into the center of ghost shapes without faces, then top with decorated pieces.
- Crimp the edges with a fork and brush with dairy-free milk and sprinkle sugar on top.
- Bake for 15-18 minutes until golden brown and cool on the trays.
- Mix icing sugar and lemon juice together for glaze and drizzle over the cooled hand pies.
