  • 2 cups Fresh blueberries Frozen can be used if needed.
  • 1/2 cup Caster/Granulated sugar Sweeten to taste; alternatives are also acceptable.
  • 2 tablespoons Cornstarch/Cornflour Substitute with tapioca starch if preferred.
  • 1 tablespoon Lemon juice Fresh enhances the flavor.
For the Glaze
  • 1 cup Icing sugar Combine with lemon juice for glaze.
  • 1 tablespoon Lemon juice Use fresh for the glaze.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (fan) and line two baking trays with grease-proof paper.
  2. Unroll the puff pastry sheets on a lightly floured surface and cut out ghost shapes.
  3. Use a small piping nozzle to cut out eyes and mouths on half of the cutouts.
  4. Combine blueberries, sugar, cornstarch, and lemon juice in a saucepan and cook over medium heat until thick.
  5. Spoon blueberry filling into the center of ghost shapes without faces, then top with decorated pieces.
  6. Crimp the edges with a fork and brush with dairy-free milk and sprinkle sugar on top.
  7. Bake for 15-18 minutes until golden brown and cool on the trays.
  8. Mix icing sugar and lemon juice together for glaze and drizzle over the cooled hand pies.
