Preparation Steps
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine shredded zucchini with salt and let sit for 10 minutes.
- Squeeze out excess moisture from zucchini using a towel.
- Mix eggs, Parmesan cheese, and half (1 cup) of mozzarella into the zucchini.
- Grease a 9x13-inch baking dish and press the zucchini mixture into the bottom.
- Bake the crust for 20 minutes until firm and light golden brown.
- In a skillet, cook ground beef and onion until browned, about 5-7 minutes.
- Stir in pizza sauce, bell pepper, mushrooms, oregano, garlic powder, and black pepper. Simmer for 5 minutes.
- Spread beef mixture over the baked zucchini crust.
- Top with remaining mozzarella cheese and cheddar cheese.
- Bake for another 20 minutes until cheese is melted and bubbly.
- Allow to cool for a few minutes before serving.
