Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine shredded zucchini with salt and let sit for 10 minutes.
  3. Squeeze out excess moisture from zucchini using a towel.
  4. Mix eggs, Parmesan cheese, and half (1 cup) of mozzarella into the zucchini.
  5. Grease a 9x13-inch baking dish and press the zucchini mixture into the bottom.
  6. Bake the crust for 20 minutes until firm and light golden brown.
  7. In a skillet, cook ground beef and onion until browned, about 5-7 minutes.
  8. Stir in pizza sauce, bell pepper, mushrooms, oregano, garlic powder, and black pepper. Simmer for 5 minutes.
  9. Spread beef mixture over the baked zucchini crust.
  10. Top with remaining mozzarella cheese and cheddar cheese.
  11. Bake for another 20 minutes until cheese is melted and bubbly.
  12. Allow to cool for a few minutes before serving.
